There are plenty of dogs that are naturally protective of their family and particularly wary of strangers, which may already sound like they're cut out to be perfect watchdogs, but there's a lot more training that needs to be done. For example, your watchdog needs to know the difference between a threatening stranger and a friend or family member he hasn't met yet. Also, if your dog barks at every stranger that walks by, like a mailman or kids playing on the street, these false alarms may have a "boy who cried wolf" effect in the event of a real home security situation, making them poor home alarms.
The best way to condition your dogs barking habits is to be extremely attentive to his every bark from the time he first opens his mouth. By attending to every bark you can either praise or scold him, letting him know which is good barking and which is bad. It's a standard case of classic conditioning.
It's obviously highly unlikely that you'll have enough situations that present themselves as times you want your dog to bark, meaning you'll have to recruit someone to play the part. If you want him to bark at someone who's fiddling with your door handle, recruit a friend he hasn't met yet to walk up to the door and try opening it. Once your dog starts barking, you can give him a praise and perhaps a few pieces of kibble to show your approval. You can do this with as many different scenarios as you want.
The opposite goes for behavior you don't want from your dog. Every time he barks at the mailman or the pizza delivery guy, give him a small smack on his nose and a sharp, "No!" to let him know that is not acceptable behavior. If you want quicker results, you can simulate the number of times someone comes to deliver things to the house or passes by on the sidewalk by recruiting friends for these scenarios, too (they'll probably volunteer for this position before the one where they're the bad guys).
You also probably want to develop a system for introducing your dog to friends and family members. For example, maybe your system to show your dog that the person you're introducing him to is okay is by standing next to them during the introduction process. You should also advise your guest that this is the standard operation so that they don't advance on the dog and scare him into thinking they're a threat. This way your dog will learn the difference between friend and foe.
By being attentive and instilling these barking rules early, you'll have a perfect watchdog that doesn't annoy you by barking at every little thing that comes by. Not only can an overly boisterous dog be a pain in the neck to listen to all the time, but it also makes you less likely to take their bark seriously, rendering them useless as alarm systems.
